People convert their quads to twist throttle because they're used to it. The thumb throttle is, from a logical standpoint, superior. You can get full range of motion on the throttle from any angle, regardless of how you're positioned on the quad. You're not prone to cracking the throttle when you land after a jump, going over bumps, etc. What happens if you start to fall off the bike/quad? You have to try to pull yourself back up with the bars. With a twist throttle, that will cause the throttle to increase the farther back you go, making it more difficult to get back on.
I hate, hate, hate twist throttles (I've ridden both, but I didn't start out on twist, thank God). Anyone that tells you that they're better has obviously just been riding them for too long, and is too stubborn to realize that it's an old, inferior design. The only advantage I can see would be that a thumb throttle is more likely to get damaged or break off, but how often does that happen?
